Your drive should show up under /Volumes
Make sure you allow FileZilla to access the device if prompted to by macOS, you can also grant permission on the Privacy and Security page of macOS' settings.

It doesn't do it over SFTP, it plays Russian roulette with your files by invoking arbitrary commands in the shell subsystem.

SFTP is not the same as SSH. SFTP is just a subsystem of SSH. It is well specified, what the SFTP subsystem can do. What isn't specified, cannot be done. A shell is a different subsystem.
