Is there a way to upload only the latest changes to a site instead of the whole site each Time? I keep getting a bandwidth issue with Host Gator when I upload a certain site each month that has long sermons on it.

Yes. If you always upload to the same location you can use the "Overwrite if source is newer" file exists action.
