So I am trying to edit a text file using FileZIlla. However, I want to use a program called NotePad++ instead of the default Notepad. Whenever I open a text file via FileZilla, by default it has me do it using notepad. Is there any way I can open and edit text files using other programs such as NotePad++?

In Explorer, right click a text document and choose Open with... (hold Shift while right clicking in case Open with... doesn't appear). Select NP++ and then check the box to alway open text files with NP++. The icon of text files will change to NP++. Please note that, due to a presumed Windows bug, you might have to do that two times before it sticks.
In case you don't want to deal with Windows' crappy association system, you can also define an extension override in the FileZilla settings (File editing - Filetype associations). Should look like the following:
