I feel really stupid asking this, but since there's hardly any useful information to find on this topic: What's my IP my Filezilla Server retrieves from http://ip.filezilla-project.org/ip.php?
I set up everything and it works quite well - and now, due to being behind my NAT I wanted to "retrieve (my) external IP adress from" http://ip.filezilla-project.org/ip.php. The log says everything's fine, but: what's my external IP from ip.filezilla-project.org/ip.php!?

Your external (or public) IP address is assigned to you by your Internet provider.

Please read carefully:
Afaik that's NOT the IP I get from my provider - otherwise I'd just could route through my NAT and firewall - but an external Hostname like myadress.synology.me that comes with a NAS.What's my IP my Filezilla Server retrieves from http://ip.filezilla-project.org/ip.php?

The service retrieves the public IP assigned by the ISP, as seen from the "outside". It will, however, only work for FileZilla products, to prevent third party abuse. Browsers and non-FileZilla software will get only 127.0.0.1 in return, which is localhost and thus useless. This is by design, FileZilla and FileZilla Server get the correct IP. You need to use a different "What is my IP" service with your browser.
Note that the service will literally print the IP as text, it doesn't work by DNS-resolving the hostname. If you already have a hostname resolving to your public IP, enter it into the Custom IP field, instead.
Just for the record, hostnames/domains are for convenience only. You cannot connect to a hostname/domain directly, they are first DNS-resolved into IPs. You could run the Internet on pure IPs without ever needing domains or hostnames.

K, I thought it's a service like some NAS manufacturers or WHS offers that you get an external adress to not have to set up the routing manually and not just a "What's my IP?"-service.
Since my PC is behind my NAT/firewall, my "What's my IP" ofc only points towards my router.

What you want is Dynamic DNS. The FileZilla IP service can't offer that, it exists because the Server (and the Client in Active mode, too) need to propose the public IP to the other site, for FTP to work properly. Even DynDNS providers like No-IP rely on their own "Check IP" services because that's the only way for their clients to learn the public IP.
For dynamic DNS, try a service like No-IP. However, the port forwarding in the router, firewall and FTP server configuration must still be done manually. FileZilla Server doesn't support shenanigans like UPNP or NAT-PMP.
