As of 2021-05-20, on the download page of filezilla server it is reported "The latest stable version of FileZilla Server is 0.9.60.2".
After downloading and installing the server, version 0.9.60-beta is reported on "about" window and on log files too.

Is it just an error on the about window not being updated, or it is actually version 0.9.60-beta?

This is correct. The only changes between 0.9.60 and 0.9.60.2 are bug fixes and signing of the installer. The actual server files getting installed are unchanged and still 0.9.60.
